As much as I love hosting and being in the kitchen with family, I don't want to be stuck there endlessly for dinner prep. That's why I always love a good Instant Pot recipe, and this Instant Pot pork loin roast is SO GOOD!
It's the perfect dish for quick family meal prepping or a festive gathering during the holidays.
The best part is that pork roast cooks in the Instant Pot in under 30 minutes!
What Is A Pork Loin?
First off, what is pork loin? A pork loin is the wide flat back cut of meat that can be boneless or bone-in.
It's soft, tender, and affordable, making it a great choice for family dinners or big crowds.
What Is The Difference Between Pork Loin And Pork Tenderloin?
Pork loin can be easily confused with pork tenderloin. They may sound similar, but they're completely different cuts of pork.
Pork tenderloin is the long and very lean backbone cut of pork along the backbone.
It's always boneless and though it's the most tender cut, it's typically a lot pricier than pork loin.
Ingredients Needed to Make An Instant Pot Pork Loin Roast
For the pork loin roast:
Seasoned Pork Loin Roast — We used a pork loin that was pre-seasoned with orange zest, fennel seed, sage, garlic and red chili flake.
Bone broth — 1 cup for roasting
Salt and pepper — To taste
For the maple orange glaze:
Orange juice — 1 cup
Dark maple syrup — 1 cup
Dijon mustard — 1 tablespoon
Cold water — 1/3 cup
Cornstarch — 1 tablespoon to thicken
Why We Love the Instant Pot Cooking Method
Our Instant Pot gets so much use at home. It's one of our favorite and most well-used pressure cooker kitchen gadgets.
Instant Pot cooking is basically one-pot cooking, so there are less dirty dishes to worry about. Plus, there's no babysitting because once the meat is in, you don't have to constantly check on it.
You can roast a pork loin in the oven or on the grill, but the Instant Pot cuts down the cooking time AND you don't have to constantly baste it!
60 minutes in the oven versus 30 minutes in the Instant Pot is a game-changer!
How To Cook A Pork Roast In An Instant Pot
Before cooking, let your pork loin roast come to room temperature. Take it out of the refrigerator to sit for about 20 minutes.
Set the Instant Pot to the sauté setting. Once it shows as "hot", line it with a small layer of olive oil.
If you'd like to sauté the outer layer of your pork loin first, place the room temperature pork loin in the pot. Sear it for approximately 4 to 5 minutes per side.
Then, remove it from the pot and place it on a large plate or cutting board. Turn the sauté setting off on the Instant Pot and remove the pork loin to switch the setting to meat/stew.
If you choose to sauté the pork in advance, be sure to deglaze your Instant Pot pan. Remove any of the seared brown bits on the bottom of the pot.
Insert the metal roasting rack and add 1 cup of bone broth to the Instant Pot. Once the meat/stew temperature is ready, place your pork loin on the roasting rack. Twist the lid of the Instant Pot, locked in place.
Let it cook for approximately 25 minutes for a medium-rare pork loin, or to an internal temperature of at least 145 degrees throughout.
For the orange maple glaze:
While the pork loin is cooking use a stovetop pan to make your orange maple syrup glaze. Combine the orange juice, brown sugar, and Dijon mustard on medium heat.
In a separate bowl, whisk the water and cornstarch until it has fully dissolved. Then, add it to the orange juice mixture on the stove. Let it come to a boil and then stir for another two minutes.
Now using a meat thermometer, check the pork loin to see if it has come for a 145 degree internal temperature. To do so, quick release the Instant Potpressure before removing the lid.
Once you've checked the pork loin and it's to temperature, remove it from the Instant Pot. Place it on a cutting board or plate and let it sit for about 15 minutes to cool.
Cut away the pork loin netting and place the pork loin on a serving platter and pour the glaze over top.
Tips On Cooking A Juicy Instant Pot Pork Loin Roast
Do not start cooking until your meat is at room temperature. Your meat should be at an even temperature throughout. This ensures that the whole pork loin cooks evenly at the same time. Overcooking will dry the pork loin.
Do not over poke the pork. When rotating the pork loin to sear or to remove the netting, be mindful about poking. Over poking will cause the juices to drain. Therefore, causing a dryer cut of meat.
Use the quick release on the Instant Pot. Your pork loin will continue cooking if you don't release the pressure. You want to avoid that since overcooking means a dry meat.
Be patient. Allow your cooked pork loin to rest on the cutting board before serving. The 15 minutes natural release method will moisturize the meat again and brings out the juices and flavors.
Garnishes. You can also add garnishes such as orange slices, rosemary, cranberry, apple, and more.
Will A Pork Loin Roast Make Pulled Pork?
The answer to that is a big yes! A pork loin roast is the whole shoulder of the pig, cut off the bone. Cook it longer to get a shreddable consistency for 40-60 minutes. Save some of the liquid to pour over to keep it moist.
What Should I Do With The Pan Juices?
The juices left behind from the cooking process are like liquid gold. After I take the roast out of the pot and remove the trivet, I use the sauté function again to turn pan juices into a delicious, rich sauce to serve over the pork.
How To Store And Reheat Pork Loin Leftovers
Store any leftovers in an airtight container. It will keep in the refrigerator for up to 4 days.
To freeze, store in an airtight container for up to 3 months in the freezer. To reheat, thaw the pork loins in the fridge overnight.
Reheat the leftovers in the microwave or on the stovetop.

In a separate bowl, whisk the water and cornstarch until it has fully dissolved. Then, add it to the orange juice mixture on the stove. Let it come to a boil and then stir for another two minutes.

Now check the pork loin to see if it has come for a 145 degree internal temperature using a meat thermometer after releasing the Instant Pot quick pressure before removing the lid.

Once you've checked the pork loin and it's to temperature, remove it from the instant pot and place it on a cutting board or plate and let it sit about 15 minutes.

Cut away the pork loin netting and place the pork loin on a serving platter and pour the glaze over top.
